Here’s one for your next date night in! with this authentic Pad Thai recipe.

A simple and easy recipe for making delicious, authentic Pad Thai at home. Just as good if not better than your favourite Thai restaurant.

I love Thai food!! I don’t know if It’s because Joe proposed in Thailand or if It’s because whenever I eat Thai food it brings back the memories of our amazing honeymoon at The Tongsai bay.

Either way we could happily eat it every week and never seem to get sick of it.

Thai is our go to for take out at home too, those Saturday nights when the kids are all bathed, fed and in bed. It’s date night at home with a bottle of red, some pad Thai and a red curry with beef.

I also like making it at home and I wanted to share this recipe with you which has a special place in my heart. Whilst on our honeymoon back in 2010 we participated in a cooking class at The Tongsai Bay resort.

This is me back in 2010 receiving my certificate after the cooking class!!

I still use this recipe almost 10 years on and it still has the power to take me back to that very day on our honeymoon in the resort kitchen. Not a worry in the world other than what would be our next cocktail! (If only life were that simple now!)

What is Pad Thai?

The word Pad in Thai is stir-fry so therefore the dish translates to stir-fry Thai. Such a simple phrase for such an amazing dish!

Did you know that During world war II, Thailand suffered a rice shortage due to the floods. So to reduce rice consumption, the Thai government promoted rice noodles and this is how pad Thai was created. It has since become one of Thailand’s national dishes. Typically made with chicken or prawns I also love adding broccoli.

I like my Pad Thai extra saucy and thats why I am so obsessed with this recipe! It’s the perfect mix of silky noodles, that sweet but savoury sauce and the crunch of peanuts. All drenched in the tangy, sour flavour of fresh lime juice.

What goes into Pad Thai Sauce?

  • Palm Sugar: A sweetener that comes from, as the name suggests, palm trees. You can get this from your local supermarket but dark brown sugar also makes a great substitute.
  • Fish sauce: if you have ever smelt it or tried it on It’s own It’s pretty gross! but there’s something about fish sauce when mixed with sugar and lemon or lime that just transforms a dish into something spectacular.
  • Tamarind paste: Tamarind from tamarind trees are a dark sticky fruit that grow in pods. It can be used in both sweet and savoury dishes but in Thai cooking It’s predominantly used in savoury dishes. I was looking through my notes from the cooking class and I noted you can substitute tamarind for lime juice.
  • Chilli Flakes: to provide some heat! If you are cooking this for the family you can have chilli flakes on the side.

What else you will need for this authentic pad Thai recipe?

  • Flat rice noodles: a quick look in the noodle isle at your local supermarket and you will find these. Cook these as per the packet instructions.
  • Vegetable oil: used for its neutral taste.
  • Garlic:m
  • Eggs; which are lightly beaten and broken up
  • Chicken breast: The finer you can slice the chicken the quicker it will cook and the better your noodles will taste!
  • broccoli: I like to add broccoli for some greens but you can use green beans if you prefer
  • Peanuts: I Love how you can buy crushed peanuts ready to go! All thats left to do is lightly toast them!
  • Bean sprouts: these come fresh or canned. I always keep a can in my pantry just in case the Pad Thai craving strikes!
  • Spring Onion
  • extra chilli flakes, lime and coriander to serve

How to make authentic Pad Thai Noodles

This recipe is so simple and quick! It really shows that making delicious, authentic noodles does not have to be hard or over complicated. Just stick to the basic ingredients and let them shine!

Step 1

Whisk the palm sugar, fish sauce, tamarind paste and chilli together to form your sauce.

Step 2

Heat oil in a wok on high heat. Add garlic and stir for 1 minute. Stir it around constantly so it doesn’t catch and burn. Add the egg and keep stirring until it scrambles, set aside.

Step 3

Add chicken and broccoli and toss until chicken is cooked.

Step 4

Add the noodles, egg, sauce, bean sprouts and spring onion. Toss together for a few min until all cooked through.

Step 5

Serve up with roasted chopped peanuts, the extra chilli, lime wedges and coriander

Authentic Pad Thai Recipe

Making authentic Pad Thai noodles at home just got a lot easier with this quick and easy recipe.

Ingredients

  • 2 tbs palm sugar
  • 1 tbs fish sauce
  • 2 tbs tamarind paste
  • 1 tbs chilli flakes plus extra for serving
  • 2 tbs vegetable oil
  • 1 garlic clove crushed
  • 2 eggs lightly beated
  • 500 g chicken breast cut into thin strips
  • 1 small head of broccoli cut into small florets
  • 125 g flat rice noodles cooked as per packet instructions
  • 1 cup bean sprouts
  • ¼ cup spring onion thinly sliced
  • 2 tbs finely chopped toasted peanuts
  • small bunch coriander to serve
  • 1 lime cut in wedges to serve

Instructions

  • In a bowl, mix palm sugar, fish sauce, tamarind and chilli together to form your sauce.
  • Add oil to a large wok on high heat. Add garlic and stir for 1 min. Continue to stir and toss so that it doesnt catch and burn. Add the egg and keep stirring until cooked, set aside.
  • Next add chicken and broccoli toss until chicken is cooked.
  • Add cooked noodles, egg, sauce, bean sprouts and spring onion. Toss for another minute or so until everything is heated through.
  • Serve up with roasted, chopped peanuts, the extra chilli, lime wedges and coriander
