Easy Almond Cake

This delicious almond cake is soft and moist and so incredibly easy to make.

Ingredients

  • 150 g butter softened
  • 1 cup caster sugar
  • 3 eggs
  • 1 tsp almond extract
  • 1 ½ cups plain flour
  • 3 tsp baking powder
  • 70 g almond meal
  • ¾ cup milk
  • icing sugar for dusting

Instructions

  • Preheat your oven to 160°
    Grease a 20cm round cake tin and line with baking paper.
  • Cream butter and sugar on medium speed until pale and creamy.
  • Beat in eggs and almond extract until well combined.
  • Add flour, baking powder and almond meal and mix. Slowly add milk and mix well.
  • Pour batter into the prepared cake tin and bake for 45-55 minutes. You will know Its ready when It's firm to touch or when a skewer inserted comes out clean.
    Leave in the tin for 10 minutes before turning out onto a wire rack to cool completely.
  • Dust with icing sugar.
