French-Style Peas with crispy Sage

Classic French-style peas with crispy sage, a totally delicious side dish that compliments any meal.

Ingredients

  • 50 g butter
  • 10 sage leaves
  • 12 lettuce leaves rolled up and thinly sliced
  • 3 spring onions trimmed and thinly sliced
  • 1 cup fresh or frozen peas
  • ¼ cup vegetable stock
  • 2 tbsp flat leaf parsley finely chopped Heat butter in a large pot or sauté pan over medium heat. Once foaming add the sage leaves and cook for a minute or until the leaves are crispy and golden. 

Instructions

  • Heat butter in a large pot or sauté pan over medium heat. Once foaming add the sage leaves and cook for a minute or until the leaves are crispy and golden.
  • Scoop out the leaves with a slotted spoon and drain on paper towel. Set aside until needed. 
  • Add the lettuce leaves, spring onion, peas and stock to the pan. Season well with salt and pepper. Cover with a lid and simmer on low for 10 minutes or until peas are cooked. 
  • The peas are cooked when they are tender but still bright green in colour. Stir through parsley.
  • Transfer the peas to a serving dish and top with the crispy sage.
