Easy banana cake with dark chocolate and walnuts

This easy one bowl banana cake is super moist and delicious. dark chocolate and walnuts folded through the batter makes this cake extra yummy.

Ingredients

  • 4 ripe bananas
  • ½ cup vegetable oil
  • 3 eggs
  • 1 cup brown sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 2 tsp ground cinnamon
  • cups self-raising flour
  • ½ cup walnuts roughly chopped
  • 200 g good quality dark chocolate roughly chopped

Instructions

  • Preheat oven to 180°C (350°F).
    Grease a 22cm round cake tin and line with baking paper.
  • Place the bananas in a bowl and mash with a fork. Add the oil, eggs, sugar and vanilla and mix well to combine.
  • Add the flour and cinnamon and mix again to combine.
  • Lastly add the walnuts and chocolate and gently mix through.
  • Pour into prepared tin. Cook for 45 minutes or until a skewer comes out clean. Allow to stand in the tin for 5 minutes before turning out onto a wire wrack to cool completely.
