Hummus

Equipment

  • Food processor

Ingredients

  • 400 g can chickpeas drained and rinsed
  • ½ cup tahini
  • salt and pepper to season
  • 1 clove garlic roughly chopped
  • 1 large lemon juiced
  • ½ teaspoon ground cumin
  • 2 tbs extra-virgin olive oil plus extra to drizzle on top

Instructions

  • Place the chick peastahini and a pinch of salt and pepper in the bowl of a food processor. Process for a minute. 
  • Add the garlic, lemon juice, cumin, olive oil and 2tbs of cold water.
    Continue to process for a further few minutes. If the mixture is too thick add another tablespoon of cold water.
  • Continue to process until you have a wonderful silky-smooth consistency. 
    Check for seasoning then transfer to a serving bowl and drizzle with extra virgin olive oil.
