Authentic lamb kofta kebabs

These moorish lamb kofta kebabs are an authentic Middle eastern dish thats makes a delicious and easy dinner any night of the week. Perfect for stuffing in flat bread with tabouli, hummus and a dollop of tzatziki.

Ingredients

  • 500 g lamb mince
  • 1 large garlic clove crushed
  • ¼ cup pistachios roughly chopped
  • ¼ cup parsley finely chopped
  • ¼ cup mint finely chopped
  • 1 tbs fresh thyme leaves
  • 2 tsp cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 2 tsp sumac
  • ½ tsp ground cinnamon
  • 3 tbs olive oil for frying

Instructions

  • Place all the ingredients in a large bowl along with a good pinch of salt and pepper and mix with your hands until well combined.
  • Using damp hands, divide the mixture into 12 equal kofta's. You can either mold them around BBQ skewers or leave as is.
  • Heat the oil in a frypan over medium-high heat.
    Cook the kofta's in batches if needed for 8-10 minutes or until golden all over and cooked through.

Notes

*If lamb is hard to find, beef mince can also be used
*Pistachios give a wonderful flavour and crunch but if you don't have these or if there is a nut allergy in your family the koftas will still taste great without them! 
*Serve with flatbreads, tabouli and hummus if desered or great on their own with a zesty Greek salad.
