Creamy garlic polenta

This easy polenta recipe is the perfect side dish for stews, braises and slow cooked meats.

Ingredients

  • 1 litre vegetable stock
  • ½ cup full cream milk
  • 2 cloves garlic crushed
  • 1 cup fine polenta also known as instant polenta
  • ½ cup parmesan cheese grated
  • 30 grams butter

Instructions

  • In a medium saucepan add the stock, milk and garlic and bring to the boil.
  • Gradually add in the polenta whisking as you go until there are no lumps.
  • Reduce heat to low and cotinue to whisk until the polenta starts to thicken, around 10 minutes
  • Remove from heat and stir through the parmesan and butter with a pinch of salt and pepper.
  • Serve polenta with your favourite stews, braises or slow cooked dishes.
