Iced Coffee for 2 lucky people

It’s starting to heat up here in Melbourne and this simple iced coffee recipe is going to be a summer staple!

I’m talking about freshly brewed espresso coffee over ice with a scoop of vanilla ice cream, topped up with full cream milk. It’s refreshing, It’s delicious and Its so simple to make!

OK so Im going to admit it I am a coffee snob! What is the definition of a coffee snob you ask? Well according to Urban dictionary here it is:

Definition of a coffee snob

1- An individual who cares about what coffee they put in their mouth. A coffee snob is not ok with starbucks, Mcdonalds…etc. (Although I have been a tad obsessed with the Starbucks gingerbread frappes over Christmas. I still can’t drink coffee from Starbucks unless It’s masked with flavouring!)

2- A coffee snob would rather drink water than drink old coffee. An anal coffee snob will not drink the coffee if it needs anything more than 1 tsp of sugar.

3- A coffee snob supports local roasters and refuses to drink any other pre-ground non-fresh coffee… Including instant.

OK so I wouldn’t say I’d tick yes to all of the above but when your only having one coffee a day you want it to be a good one!

It’s funny how over the years coffee has become a passion of ours and after having kids It’s become an obsession! Even our kids know, first stop is coffee! For me, Its just that time of day I look forward to, enjoying a great coffee. Even if 9 times out of 10 It’s gone cold before I can finish it.

Iced coffee

Although we are so spoiled for great coffee here in Melbourne, an iced coffee will set you back around $6 and I think this recipe tastes just as good as your barista’s iced coffee.

Can you make the coffee ahead of time?

You sure can make the coffee ahead of time. Keep the coffee in the fridge until you are ready to use it or (for up to 4 days)

My top tips for making the best iced coffee

  • Sweeten the coffee while It’s still hot so that the sugar dissolves.
  • For best results, cool the coffee before serving but if your in a hurry just add extra ice to your cup and the ice will cool the coffee down.
  • Make sure you use a good quality vanilla ice cream this makes a world of difference. I use Connoisseur classic vanilla ice cream.
  • using a full fat milk will result in a creamier iced coffee

Refreshing iced coffee

Iced coffee

Cool down this summer with a refreshing iced coffee just like your local barista makes it!

Ingredients

  • ice to fill 2 glasses
  • 2 shots of good quality espresso coffee
  • 2 tsp sugar
  • 2 scoops vanilla ice cream
  • 2 cups cold milk May need less depending on size of glasses

Instructions

  • Place two tall glasses in freezer for a few minutes to chill while you prepare your coffee
  • While the coffee is still hot, add sugar and stir until sugar has dissolved
  • Fill the 2 glasses with ice and pour 1 shot of coffee over the ice in each cup.
  • Add 1 scoop of ice cream to each glass and top with cold milk
  • Serve with a long spoon and straw and enjoy
