These shredded beef tacos are truly the BOMB!

Crispy (or soft) taco shells with melt in your mouth beef in a rich sauce with all the fresh trimmings. Just pass me a Margarita and bring out the sombreros because I am in Mexican heaven!

I am officially dedicating this Post to my 5 year old son Jamie because he is obsessed with tacos. He has 4 favourite foods being pancakes, hamburgers, pumpkin soup and of course tacos. When he gets home from kinder or day care he asks me “Mum whats for dinner?” I have never seen a face light up with such excitement when I say Its shredded beef tacos Jamie! (lets not mention what his reaction is when Its not one of his favourite foods!)

He is not much of a meat eater but the beef is slow cooked and It breaks away with the gentlest touch of a fork! It literally melts in your mouth and so there is no complains from Jamie or any of my kids.

I also love this for entertaining; OK so picture this, in the middle of your dinner table you have your juicy shredded beef, crispy taco shells (or soft, or both as I have done) and all the trimmings. Your guests sit around the table and pile up their plates by making their own delicious tacos!

Other ways to serve the shredded beef

of course this slow cooker beef is perfect for tacos but you can also use this shredded beef recipe for loads of other things. Here are just a few ideas!

  • Delicious filling for Burritos, Quesadillas and Enchiladas
  • Turn a side dish of Mexican rice into an amazing main meal by adding the shredded beef and all their juices
  • Piling it up over your Nachos
  • The beef also make for some pretty good sliders

What you need to make the slow cooker shredded beef:

  • Beef chuck which is perfect for low and slow cooking. Its a cheaper cut of meat but show it some love and its going to be oh so tender!
  • Spice mix; Rub your meat with a mixture of dried oregano, paprika, coriander and cumin to give it loads of flavour.
  • Brown Onions and garlic
  • Crushed tomatoes and beef stock is the braising liquid that the beef is going to bask in and slowly but surely soak up leaving you with deliciously tender meat.
  • Juice of an orange; This will probably sound totally strange but the natural acidity of the orange juice works to tenderise the meat. Leaving you with the melt in your mouth shredded beef. Yum!

How to make these awesome Tacos!!!

  1. first you need to show the meat some love so take some time to rub the meat with all the lovely spices and a big pinch of salt and freshly cracked pepper.
  2. Next sear the meat all over in a hot pan
  3. Now you transfer the meat to your slow cooker along with all the remaining ingredients. Turn your slow cooker to low and leave it to work Its magic until your left with falling apart tender meat!
  4. while the meat is cooking you have loads of time to prep your oh so important trimmings for the tacos.
  5. Remove the meat from the sauce and shred using 2 forks. place meat back into the sauce to soak up all that juicy goodness.
  6. Transfer to a serving platter and serve with your taco shells, grated cheese, fresh coriander, diced tomatoes, corn, avocado and a dollop of sour cream or for a healthier version natural yoghurt.

Now all thats left to do is pile up your taco shells and devour!! the crunch of the taco shell, the juicy beef and the freshness of the sides makes for a truly amazing experience for your tastebuds!

Slow Cooker Shredded Beef Tacos

These easy tacos with melt in your mouth shredded beef are a must try and perfect for entertaining or feeding your hungry family.

Equipment

  • Slow Cooker

Ingredients

  • 800 g Beef chuck
  • 1 tbsp dried oregano
  • 1 tsp paprika
  • 1 tsp coriander ground
  • 1 tsp cumin ground
  • 1 onion diced
  • 4 garlic coves crushed
  • 400 g can crushed tomatoes
  • 2 cups beef stock
  • Juice from 1 orange
  • 12 taco shells
  • 1 cup grated tasty cheese
  • 1 small bunch fresh coriander trimmed
  • 3 tomatoes diced
  • 400 g can corn kernels drained and rinsed
  • 2 avocados smashed
  • 1 cup sour cream or greek yoghurt

Instructions

  • Rub the spices along with a good pinch of salt and freshly ground peper all over the meat.
  • Heat a frypan on high heat with 1 tsp oil and sear the meat all over, turning every few minutes.
  • Transfer meat to a slow cooker along with the onion, garlic, tomatoes, stock and orange juice. Cook on low for 4 hours or until the meat is falling apart.
  • Remove the meat from the cooking liquid and shred using 2 forks. Return meat to the cooking liquid.
  • Heat the taco shells according to packet instructions. Prepare all your sides and place into bowls. Transfer the meat to a serving platter.
  • To asseble your tacos start with some pulled beef and top with all your trimmings.
