It feels like your cheating!

Last weekend my husband was in our bedroom with the kids and mentioned that scones would be a nice treat. I managed to sneak out and within 30 minutes I had made them a fresh batch of scones. It’s definitely something I need to do more often.

Scones

Scones are a traditional afternoon tea staple loved in Australia, England and many other countries. They can be sweet; served with jam and cream or savoury such as pumpkin or cheese.

In Australia, scones are traditionally round so that they can easily be split in half and spread with jam and dolloped with thickly whipped cream. They can also be triangular or log shaped.

In America and Canada scones are known as the American biscuit.

When I think of scones I think of afternoon tea, cake stalls, bridal showers, baby showers and special occasions like Mothers day. With a recipe this easy you can enjoy scones any time!

Freshly baked scones

Why I love these easy homemade scones

As a kid we did a yearly visit to the Mornington Peninsular usually around Easter time. We would stay at a Bed and breakfast in Flinders where the owner made a fabulous Devonshire tea with freshly baked scones. The smell of her scones would fill the whole house and it was so warm and comforting.

Not too long ago I made a trip back to Flinders and went for a walk to that same Bed and Breakfast which to my surprise was closed. As I turned to leave the owner came out and said the Bed and Breakfast had been closed for some time now and that they were in the process of moving.

It always amazes me how food has the power to take you back to moments in time. Although that bed and breakfast is now closed the woman kindly gave me the recipe for those scones that I devoured as a kid. Now every time I bake her scones it takes me back.

Who’s to argue with a recipe thats been successful for over 25 years!

The best part is you just won’t believe how quick and easy it is!

What you will need

  • Self raising flour
  • Icing sugar
  • Cream
  • Milk

Just 4 simple ingredients is all you are going to need for these easy homemade scones!

Scone dough

How to make homemade scones

In a large glass bowl add all the ingredients and mix until a dough starts to form.

Turn the dough onto a lightly floured surface and working the dough, bring together until you have a smooth ball. No need to knead the dough. In-fact when it comes to scones the less you knead the better as it can make the scones tough and dry.

Gently roll over the ball of dough to flatten it slightly.

Using a scone cutter press straight down into the dough then gently place onto an oven tray.

Roll remaining dough back into a ball and repeat until all the dough is used. I get approximately 10 scones out of one batch.

Bake for 10-15 minutes until golden.

Serve with jam and fresh cream.

Fresh cream

All thats left to do now is put the kettle on and enjoy these with your favourite brew!
