These have got to be the best chocolate chunk oat cookies ever! Loaded with chunks of dark and milk chocolate, they have just the right amount of chewiness and softness with a little crispiness on the outside. You are going to be hooked!

How Devine is the smell of freshly baked cookies! There is something so warm and comforting with the house being filled with that aroma.

The highlight of my kids day would have to be sitting at the kitchen bench, glass of milk in hand and one of these cookies.

Chocolate chunk Oat Cookies

There are so many different chocolate chip cookie recipes out there. This has been one of my favourites for quite a few years now.

Why do I swear by this recipe? I think it comes down to two things;

Firstly, Chocolate chunks; Sure you can use regular chocolate chips in the recipe and they will still taste really good. However, if you want to up that level of indulgence then go for bigger chunks of chocolate.

I don’t use cooking chocolate. Thats my secret! I use the chocolate I love to eat and for me thats Koko black dark chocolate and Koko black milk chocolate.

Secondly, Rolled oats; adding chewy oats into your cookie dough not only makes it a “healthier” cookie but gives you a wonderful texture and of course that all important chewiness!

Another reason why I love this recipe is because its very quick and simple. There is no dough chilling required. So Its an easy one to whip up at 3pm when the sweet craving hits you.

These don’t last very long at our place because if you eat the cookies while they are still warm you will get big chunks of gooey melted chocolate in every mouthful! #cookieheaven

Getting the kids involved

It’s a crazy time in the world at the moment as we all struggle with the affects of COVID and the many challenges it brings.

I started working from home this week. Joe is still going into work, being an electrician at Melbourne water he is considered essential services.

So I am working three days a week at home with Olive (7) Jamie (5) and William (3). Explaining to a 3 year old to understand that mummy has to work and I need him to be a good boy, well I might as well be saying no you cannot go into that lolly store!

Trying to keep the kids occupied in between meetings, phone calls and video conferences is a challenge to say he least.

I am blessed to still have a job and am lucky enough to work for a company that is flexible. Seriously, hats off to all the mums out there trying to juggle working, looking after the kids and as of next week home schooling.

What you will need

The good news is theres nothing fancy needed. Just regular staple ingredients which you probably already have stocked at home.

How to make the best chocolate chunk oat cookies

Preheat your oven to 180 degrees or 160 degrees for fan forced. Line 2 oven trays with baking paper.

In an electric mixer, beat butter, sugar and eggs until smooth and creamy.

Stir in flour, self raising flour and roughly chopped dark and milk chocolate. Mix until well combined.

Roll tablespoons of the mixture into balls and flatten slightly. Place on prepared trays 5cm apart.

Bake for 12-14 minutes or until just starting to go golden. Even after removing them from the oven the cookies will continue to cook on the hot tray.

Allow to cool slightly before transferring them to a wire rack to cool completely.

Storing your cookies

The cookies keep best in a sealed, air tight container. keep them in a cool and dry place like the pantry. They will last for 7-10 days. However I highly doubt the batch would last any longer than 48hrs before being completely devoured. 🙂

  • 125 g butter unsalted
  • 1 cup dark brown sugar
  • 2 eggs
  • 1 cup self raising flour
  • 1 cup plain flour
  • ¾ cup rolled oats
  • 150 g dark chocolate roughly chopped
  • 150 g milk chocolate roughly chopped

Instructions
