Who doesn’t love pancakes!! My Yoghurt pancakes with passionfruit and coconut are so pretty on the plate, but guess what they are good for you too!

Hands down this is one of my favourite pancake recipes and here is why!

Do I need to go on…

I love cooking with yoghurt as it adds texture and those tangy notes. Its also a much healthier alternative to heavy creams. Natural yoghurt can also be used in place of buttermilk and sour cream in your cakes and pancakes. The yoghurt in these pancakes leaves you with fluffy, soft and moist pancakes.

We love having pancakes on Sunday mornings when we have a bit more time to have breakfast as a family. Weekdays for us resemble chaos and thats an understatement. With three kids and two working parents plus my food blog and Joe’s electrical business life can get pretty hectic.

This recipe is great to get the kids involved as the ingredients are minimal and the steps are easy to follow. with close supervision I had Jamie, my 5 year old flipping the pancakes on his own.

What you will need

  • Greek style yoghurt make sure its plain
  • Eggs
  • Butter
  • Honey to replace the sugar and add sweetness
  • Vanilla bean paste: I use Queen organic vanilla bean paste, not the essence. It makes a huge difference and I love that you can see the tiny specs of the vanilla bean.
  • All purpose plain Flour
  • Bicarb soda: This is where the magic happens! the yoghurt helps to activate the bicarb soda resulting in lighter, fluffier pancakes!
  • Baking powder to help the pancakes to rise up

To Serve

  • Mango yoghurt: We are obsessed with The Collective natural probiotic yoghurt. Its packed full of live cultures and its not too sweet.
  • Passionfruit pulp: gives a tartness and adds a lovely texture
  • Sliced banana
  • shredded coconut

The recipe greedily satisfies the 5 of us so its perfect for a family with hungry toddlers. (And parents) So grab a bowl and a whisk and get these yoghurt pancakes with passionfruit and coconut on your breakfast table!

Yoghurt pancakes with passionfruit and coconut

You are only a bowl and a whisk away from making these ridiculously healthy and delicious yoghurt pancakes.

Ingredients

  • 500 g Natural greek style yoghurt
  • 2 eggs
  • 50g butter melted plus extra for cooking
  • ¼ cup honey
  • 1 tsp vanilla bean paste
  • cups all purpose plain flour
  • 1 tsp baking powder
  • ¼ tsp bicarbonate of soda
  • mango yoghurt to serve
  • passionfruit pulp to serve
  • 2 bananas sliced on a diagnal to serve
  • shredded coconut for garnish

Instructions

  • In a large bowl whisk the yoghurt, eggs, butter, honey and vanilla. Add the flour, bicarb soda and baking powder and carefully mix until well combined.
  • Heat a a crepe pan or medium frying pan with 1tsp butter on medium heat. Cook ¼ cups of the batter in batches for 2-3 minutes. When bubbles start to form on the surface they should be ready to flip. Cook for further 2-3 minutes until pancakes are golden.
    Repeat with remaining batter.
  • Place 2-3 pancakes on each serving plate. spoon over some of the mango yoghurt, add the sliced banana. Drizzle over the passionfruit pulp and top with the shredded coconut.

*the batter can be made the day before and stored in an airtight container in the fridge.
*If fresh passionfruit is not available use the canned passionfruit pulp
