Pea fritters with crispy pancetta

Ingredients

  • 1 cup frozen peas
  • 3 eggs
  • 250 g fresh ricotta
  • ½ cup plain flour
  • 1 tbsp olive oil plus extra for frying
  • 3 spring onions finely chopped
  • 8 slices pancetta
  • Greek style natural yoghurt to serve

Instructions

  • Bring a medium saucepan of water to the boil, salt the water and blanch peas for 2 minutes. Drain, refresh under cold water. 
  • In a large bowl add peas, eggs, ricotta, flour, oil and spring onion. Season well with salt and freshly ground black pepper.
    Mix well until combined. If the batter is too thick then add a splash of cold water.
    Set aside for 10 minutes. 
  • Meanwhile place the pancetta on an oven tray and grill for 5 minutes until crisp and golden. Drain on paper towel and keep warm. 
  • To cook the fritters, heat oil in a large fry pan on medium-high heat. Working in batches, add ¼ cup measures of the batter to the frypan. Flatten slightly with the back of your flipper and cook for 2 minutes on each side until golden. 
    Serve with the crispy pancetta and dollops of Greek style natural yoghurt.
