These yummy pea fritters with crispy pancetta make a delicious brunch, lunch or a tasty snack. Perfect for little ones lunchboxes too. Eating your peas has never tastes so good!

During the week It’s cereal or muesli for me and the kids and granola breakfast cups to go for hubby. So when the weekend comes around I like to make it a little bit more special.

I love lazy Sundays, getting the kids involved in making breakfast and then sitting together with the family to dig in. for the weekends I love making things that excite us like fluffy pancakes, smashed avocado with eggs and bacon or creamy porridge. These pea fritters are also on that list 🙂

Pea Fritters

Pairing the fritters with crispy pancetta is like another variation of bacon and it goes together perfectly. The softness of the fritters with the crunch and saltiness of the pancetta goes together like “rama lama lama ka dinga da dinga dong” I’m a Grease fan Ok!

Pea Fritters

I get really excited whenever I talk about these delightful fritters because they are so tasty and so easy to make. They are also a great batter for a savoury pancake.

So what are fritters exactly? well they are very similar to a pancake in that they are are made by mixing together a batter. They differ in the way that the batter is a lot more dense and chunkier.

Fritters are loaded up with veggies such as zucchini, peas or potato. They typically have cheese such as parmesan, ricotta or haloumi and finely chopped fresh herbs. They are also made a lot smaller than pancakes.

Fritters can be served hot or cold. they are delicious on their own as a snack and are great for babies and toddlers.

They make a healthy breakfast served with poached eggs or a tasty lunch paired with a leafy side salad.

Like a lot of the recipes I share you can add and subtract to make it just how you like it! Don’t like peas? add zucchini. Don’t like pancetta? substitute for bacon. Maybe you want to add some feta to the mix?

What you will need

Frozen peas

Eggs

Fresh ricotta (So yum!)

Plain all purpose flour

Extra virgin olive oil

Spring onions

Pancetta; an Italian cured meat made from pork belly. You can substitute with bacon.

Greek style natural yoghurt to serve

How to make Pea Fritters

Start by cooking your peas. Bring a medium saucepan of water to the boil, salt the water and blanch your peas for 2 minutes. Drain, refresh under cold water then drain again. 

In a large bowl add peas, eggs, ricotta, flour, oil and spring onion. Season well with salt and freshly ground black pepper. Mix well until combined. If you find the batter is too thick then add a splash of cold water. You want the consistency of pancake batter. 

Set aside for 10 minutes to rest before cooking. 

Meanwhile place the pancetta on an oven tray and grill for 5 minutes until crisp and golden. Drain on paper towel and keep warm. 

To cook the fritters, heat oil in a large fry pan on medium-high heat. Working in batches, add ¼ cup measures of the batter to the frypan. Flatten slightly with the back of your turner and cook for 2 minutes on each side until golden. 

Serve with the crispy pancetta and dollops of Greek style natural yoghurt.

How to serve pea fritters

I love to serve the pea fritters with the crispy pancetta and dollops of greek style yoghurt. Our family loves eating them for breakfast and if we are really hungry I will poach some eggs and it keeps us full until lunch time.

The fritters aren’t only great for breakfast but can be served for lunch with a leafy green salad or in a wrap.

If we get lucky and I have some fritters left over they are great for the school lunchboxes the next day.

The fritters are also an easy way to get your toddlers to eat their greens. They are really soft making it easy for them to digest and also easy to hold for when they are the go.

Why not make a batch to take along to your next picnic or trip to the zoo.

Can they be frozen

The fritters can be kept in the fridge for 3-4 days but if you want to keep them longer they freeze really well.

I store mine in reusable silicone storage bags they are great for storing and freezing food and they are Eco-Friendly.

Fritters can be frozen for up to one month. Take out 24 hours before and place in the fridge if you are wanting to pack them for kids lunchboxes.

To reheat them, place them on an oven tray lined with baking paper and heat in a moderate oven for 10-15 minutes until heated through.
