WARNING!!! This Rocky Road is very addictive!

This easy rocky road is going to rock your world! Chewy marshmallows, toasted nuts, glacé cherries and crumbly shortbread folded through Dark and Milk chocolate. It’s the perfect Christmas gift, a much loved party classic and the best 3pm pick me up.

My absolute favourite thing about Rocky road, other than it tastes amazing is that there’s no baking required! Its super easy to make and all you need are simple kitchen utensils. No fancy gadgets or mixers to clean.

I mostly make rocky road during Christmas time to gift to friends and family. The best gifts are home made gifts and I love how much joy it brings to people when they realise they have just ben given a jar of rocky road.

It’s such a delight and I really should make it more often!

I find myself sneakily going to the fridge for just one more piece! (which turns into 3 or 4 more!) No judgement OK!

Rocky Road

An irresistible sweet dessert/slice/slab made by melting dark and milk chocolate and folding it though marshmallows, nuts, shortbread, glacé fruit or lollies. You can experiment with different flavours and textures.

Its a fun and easy way to get your kids involved as this is a beginners recipe and requires minimal skill and experience in the kitchen. Just follow my simple recipe below.

Why is Rocky Road Called Rocky Road?

The name comes from the rocky road that travellers had to take to reach the Goldfields.

Did you know that Rocky road was created in Australia. It was confectionery companies way to use up lollies that had gone bad. How cheeky!!

What goes into rocky road

  • Chocolate; I use a mixture of dark and milk chocolate. It is important to use a good quality chocolate such as Cadbury for best results.
  • Marshmallows; There is something about marshmallows and chocolate! that gooey, chewiness! You can use the mini marshmallows or you can use the medium size ones and roughly chop them.
  • Almonds; you can use any type of nuts that you like. I like using almonds but Iv’e also made rocky road with hazelnuts and macadamia nuts and it was equally delicious. You could even use a mixture of different nuts.
  • Glacé cherries; are candied cherries. They are pitted cherries in a sugar syrup and can be found at your local supermarket.
  • Shortbread biscuits; buttery, crumbly and delicious they go so well in rocky road! You can also substitute with gluten free shortbread.

How to serve rocky road

When you are ready to serve your rocky road simply remove from the fridge and transfer onto a chopping board.

Using a sharp knife, cut into long strips and then smaller pieces. I like to slice the smaller pieces on the diagonal and I also trim off the very ends of the slice as these pieces can look a bit ruff around the edges. (Do not let them go to waste of course 😉)

Arrange on a serving platter.

I love how Rocky Road can also double up as a home made gift to give to family, friends or even teachers. I thickly slice the rocky road and wrap the blocks in clear cellophane and tie the ends in ribbon.

Easy Rocky road recipe

This indulgent rocky road recipe is loaded with marshmallows, nuts, glace cherries and crumbly biscuit and its so easy to make

Ingredients

  • 2 cups mixed colour marshmallows roughly chopped
  • 1 cup almonds roughly chopped
  • 1/2 cup glace cherries
  • 250 g dark chocolate roughly chopped
  • 250 g milk chocolate roughly chopped
  • 150 g shortbread biscuits roughly broken up

Instructions

  • Lightly grease and line a 18cm X 30cm slice pan
  • In a small bowl set aside 1/3 of the marshmallows, almonds and cherries.
    Place the chocolate in a bowl over simmering water and stir until melted. Make sure the bowl does not touch the water.
  • Stir through the shortbread along with the remaining marshmallows, almonds and cherries into the melted chocolate. Working quickly transfer to the lined slice pan.
    Top with the reserved marshmallows, almonds and cherries, pressing down gently as you go.
  • Refrigerate until firm and then slice into squares to serve.
