Curried beef and cabbage is a great recipe to have up your sleeve for a quick and easy weeknight dinner. Delicious, fragrant and comforting, this dish can be served with rice or noodles and will impress even the fussiest eaters.

It’s a healthy and totally satisfying dinner done in just 30 minutes!

Funnily enough I learned this recipe from my Nonna. Although It’s definitely not Italian, It’s yummy none the less.

This is one of those recipes like Singapore noodles and pad Thai that I don’t make often enough and when I do, I remember how simple it is to create something thats really tasty.

Curried beef and cabbage

Curried beef is made by sautéing beef mince with onion, carrot and cabbage along with curry powder. I use a pre made organic curry powder which you can buy here on Amazon. You can also find it in the spice isle of your local supermarket.

Curry powder has a really unique flavour due to it having a mixture of both sweet and savoury aromatics including;

  • Tumeric
  • Chilli powder
  • Cumin (ground)
  • Coriander (ground)
  • Ginger (ground)
  • Black pepper

Even though there is a lot of different spices from the curry powder the dish itself is not spicy, intact it is quite mild. The recipe uses 1 tablespoon of curry powder but the beauty of cooking is you can play around with the quantity.

If you want the extra kick then you could add an extra tablespoon and if your not one for spice then you can add a little less.

What you will need

  • Olive oil
  • Onion
  • Garlic
  • Carrot
  • Beef mince
  • Curry powder
  • Chicken stock
  • Cabbage
  • Steamed rice (to serve)

How to make Curried beef and Cabbage

Start by prepping your ingredients; dicing the onion, halve the carrots and slice them into half moons and shredding the cabbage. You can do this using a mandolin or a good sharp knife.

Heat oil in a large frying pan or skillet over medium heat. 

Add onion and garlic cook until softened. 

Then add the carrot and cook for a few more minutes. 

Next add mince and cook until browned. Add curry powder and stir well to combine.

Add stock and cabbage and cook until the cabbage has wilted and the carrots have softened. Season with salt and pepper.

Serve with steamed rice or noodles.

Storing the curried beef and cabbage

The curried beef and cabbage will keep in the fridge for up to 4 days. To reheat simply heat a frypan on medium heat, add a little oil and fry until warmed through (approx 5 minutes)

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic crushed
  • 500 g beef mince
  • 1 tbsp curry powder
  • 2 carrots sliced into half moons
  • 1/2 cup chicken stock
  • ½ cabbage shredded
  • Steamed rice to serve

Instructions
 

  • Heat oil in a large frying pan or skillet over medium heat.
    Add onion and garlic cooking for 2 or 3 minutes until softened.
    Then add the carrot and cook for a few more minutes.
  • Next add mince and cook until browned.
    Add curry powder and stir well to combine.
  • Add stock and cabbage and cook until the cabbage has wilted and the carrots have softened, about 10 minutes.
    Season with salt and pepper.
  • Serve with steamed rice.
