This is a classic omelette recipe where we fold the egg over encasing all the delicious ingredients inside. When cooked right, your omelette will be beautifully silky, golden yellow and oozing with cheese, mushrooms and spinach.

Don’t consider yourself a chef? No worries because even the most amateur cook can easily master this recipe. Don’t be disheartened if your omelette is not a masterpiece on your first try, Practice makes perfect.

Omelettes always remind me of holidays! Which is something Iv’e been daydreaming about a lot lately!

You know the resort style buffet breakfast with the omelette stations. The chefs make it look so fancy and complicated as they flawlessly flip those omelettes. Truth is making an omelette does not have to be scary, with a little practice you can master it too!

I had forgotten about the humble omelette until I had recently upped my exercise game as those iso kilos crept on. Omelette’s are fantastic for weight loss as eggs are a great source of protein, they keep you fuller for longer and because an omelette is so satisfying on It’s own you don’t need bread. So It’s a great way to cut out carbs.

Ready in just 15 minutes it’s a wonderful, healthy and speedy meal to enjoy any time!

what is an omelette exactly? Well It’s a dish made from beaten eggs fried with butter or oil and folded around filling such as cheese, mushrooms, ham and spinach.

Omelettes are typically served for breakfast but they are perfect for any time of day. Equally delicious as a healthy lunch or light dinner served with a garden salad. Even as a quick afternoon snack.

Tips to cooking the perfect omelette

The trick is to not overcook the eggs. Remember that eggs cook on very low heat and will continue to cook even when the heat is turned off. For perfectly cooked eggs, remove from the heat when the egg is almost done. that way by the time your omelette hits the plate it will be perfectly cooked.

Adding a splash of milk or cream in with your beaten eggs will give you a creamy omelette.

As soon and your eggs hit the pan, start to gently move them around with a spoon or a spatula. This is how you achieve a fluffy omelette.

Cook the eggs of low-medium heat to ensure the bottom does not overcook before the top has had time to set.

Flavouring your omelette

Once you have mastered the basic omelette recipe the flavour combinations are endless.

In my basic recipe the omelette is flavoured with cheese, spinach, garlic and mushrooms. Here are some other great ideas:

Main event: Bacon, ham, salmon, prosciutto

Cheese: Think Cheddar, Feta, Goats cheese, Mozzarella, Haloumi, Gruyère, or Fontina cheese.

Veggies: Tomato, onion, capsicum, kale,

Herbs: provide flavour and freshness, some of my favourites are basil, dill, parsley, thyme and chives.

Spices: such as chilli, black pepper and cayenne pepper

What you will need

  • Olive oil
  • Button mushrooms (try experimenting with different mushrooms for a more robust flavour)
  • Garlic
  • Spring onion
  • Baby spinach leaves
  • eggs
  • Milk
  • cheese
  • Basil

How to make an omelette

Here is what you have to do to achieve a beautiful, silky omelette thats perfectly cooked and oozing with deliciousness.

Heat oil in a frypan over medium heat; add mushrooms, garlic and spring onion. Cook for a few minutes giving them a good toss around the pan every minute or so.

 Add spinach leaves and cook until the spinach has wilted. Remove from pan and set aside.

Now for the eggs, whisk together the eggs with a splash of milk and season with salt and cracked pepper. 

Wipe pan clean, add remaining oil and heat over medium to low heat.

Pour egg mixture into pan, using a spatula, gently move the egg around the pan and cook for a few minutes until the egg starts to set.

Sprinkle the cheese over the egg, this will melt and ooze out off your omelette.

Add the mushroom mixture and basil to half of the egg mixture and continue cooking until egg is almost set. Use a spatula or egg flipper to gently fold the omlette over encasing the filling. 

Transfer onto a plate and serve immediately.

Keeping your omelette Omelette

Your omelette will keep for up to 3 days stored in the fridge in an airtight container.

for meal prepping, prepare the omelette the day before and place in a sealed container in the fridge. Once your ready to eat it microwave on high for 2-3 minutes or until well heated through.

Ingredients
  

  • 2 tbsp olive oil
  • 50 g mushrooms sliced
  • 1 garlic clove crushed
  • 1 spring onion sliced
  • 50 g baby spinach leaves
  • 2 medium eggs
  • splash of milk
  • ¼ cup cheddar cheese
  • 8 basil leaves chopped

Instructions
 

  • Heat 1 tablespoon of oil in a frypan over medium heat; add mushrooms, garlic and spring onion. Cook for a few minutes.
    Add spinach leaves and cook until spinach has wilted. Remove from pan and set aside.
  • Wipe pan clean, add remaining oil and heat over medium to low heat.
  • Whisk together eggs with a splash of milk and season with salt and pepper.
