A healthy and delicious way to start your day is with these gorgeous chia pudding pots. Ridiculously easy to prepare and only 4 ingredients needed to form the base of your puddings. Your then set to let your creativity run wild with so many ways to jazz up your jars. I love using natural yoghurt, passionfruit and fresh raspberries.

This recipe is my no excuse for having no time for breakfast recipe! It’s as simple as mixing the 4 ingredients together the night before, pop it in the fridge and voila, breakfast is ready in the morning!

They do not only make breakfast a breeze but they are equally as great for a 3pm pick me up when you are searching for something sweet but don’t want to regret your choice later.

My inspiration for these came about two years ago when we went on a family holiday to the Gold Coast. Every morning at the breakfast buffet they had these gorgeous looking chia cups and I could not wait to recreate my own when we got home.

I’m all about taking the stress out if meal prep and this definitely ticks all the boxes.

Its seriously so easy to put together and once you have got the correct ratio of chia seeds to milk then you can mix and match and experiment with different sweetness and different toppings.

Chia seeds are a superfood in their own right. I would go as far as to say that they are probably one of the healthiest and most nutritious food on earth!

Chia seeds contain:

  • Folate
  • B vitamins
  • Antioxidants
  • Fibre
  • Calcium
  • Magnesium
  • Zinc
  • Omega-3 fatty acids

Gluten intolerant? Vegetarian? Vegan? No worries this recipe is for you!

The question is why aren’t we eating more of it!

Commonly used in smoothies, smoothie bowls, porridge and sprinkled over cereal. I love these pots as they are perfect for breakfast on the run. I love to set the puddings in small jars with screw top lids. You can purchase these really cute breakfast jars by clicking here.

You are just 4 ingredients away to making this irresistible chia pudding!

Chia seeds; These are now widely available at supermarkets and health food stores. You can also purchase them on AMAZON.

Coconut milk: This gives the pudding a wonderful creaminess. You can also replace the coconut milk with any type of milk including full cream milk, almond milk or soy milk.

Maple Syrup: For sweetness

Vanilla bean paste: a little goes a long way to add a beautiful vanilla flavour.

How to make chia pudding

If you are using breakfast jars then you can simply divide the ingredients between the jars, gently stir and then place in the fridge overnight.

Otherwise gently stir together the chia seeds and coconut milk in a small bowl. Cover and set in the refrigerator overnight.

In the morning, give the pudding a good mix, breaking apart any clumps then simply divide between serving bowls or jars and top with your favourite yoghurt, fruits, nuts and seeds.

In this recipe I have used natural yoghurt, passionfruit pulp and fresh berries.

How long will it keep

Another great thing about chia pudding is that it will keep for about 5 days in the fridge in an airtight container or jars. So basically if you make up a batch on Sunday, you can have breakfast done for the whole week! Just use different toppings to change it up a bit.

Chia seeds really are a dream for meal prep as they can be prepped up to 5 days in advance.

Once you try this recipe you’ll be able to do it again with your eyes closed, It’s that simple!

Ingredients
  

  • ¼ cup chia seeds
  • 1 cup coconut milk
  • 1 tsp vanilla bean paste (or exract)
  • 1 tbsp maple syrup
  • natural greek yoghurt to serve
  • passionfruit pulp to serve
  • fresh raspberries to serve

Instructions
 

  • Place all ingredients in a small bowl and mix well to combine
  • Divide mixture between 4 jars/pots and place in fridge to thicken up overnight.
  • Top the jars with natural yoghurt, passionfruit and fresh raspberries.
